How do you make a Mimosa without the booze? At Fairgrounds in Chicago, the solution comes in the form of this delicious tea-based twist.
2 oz. Jasmine Green Tea Concentrate
½ oz. simple syrup (1:1)
4 oz. orange juice
3 oz. sparkling water (Fairgrounds uses Topo Chico)
Garnish: 1 slice clementine
Fill a jar half way with ice. Add the green jasmine concentrate, simple syrup and orange juice. Stir to combine and top with sparkling water. Garnish.
Jasmine Green Tea Concentrate: Steep 2 teabags of Jasmine Green Tea (Fairgrounds uses Rishi) in 8 oz. of hot water. Remove the teabags before use.
